PLANT-BASED PAELLA

Ingredients:
  • Plant-based "Mediterranean style" Bites

  • 400 gr of rice

  • 500 ml of vegetable broth

  • 1 onion

  • 1/2 red pepper

  • 1 green pepper

  • 1/2 zucchini

  • 1/2 eggplant

  • Olive oil

  • Salt

Preparation:

Cut the vegetables into squares.

Put a drizzle of oil in a casserole, add the vegetables and cook them until they are tender.

Add the rice and fry together with the vegetables for a couple of minutes.

Add the broth, mix well and add salt.

Cook about 20 min over medium heat.

When it takes 15 min, add the vegetable bites, distributing them over the rice.

Let rest a few minutes before serving.
